Peanut Butter Banana Chocolate Chip Baked Oatmeal

is by far my favorite!  And I think I can speak for the rest of the family, that it is their favorite too.  The best part is that with the banana and chocolate chips, it is plenty sweet with only a 1/4 cup of agave (or other natural liquid sweetener of your choice).  This is a must try!

PBC (for short) Baked Oatmeal

Ingredients:

1 1/2 cups gluten-free rolled oats (or regular oats)

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 cup peanut butter

1 ripe banana, mashed or pureed, about 1/2 cup

1/4 cup agave or honey

1 teaspoon vanilla

1 egg

1/2 cup chocolate chips

Directions:

1.  Preheat oven to 350*.  Lightly grease 1 1/2 quart casserole dish or 7×11 baking dish.

2.  Combine oats, baking powder, cinnamon, and salt in large mixing bowl.  Mix well.

3.  Add in peanut butter, banana, vanilla, and egg.  Stir until combined.  Fold in chocolate chips.

4.  Pour into baking dish 20-30 minutes, depending on dish, until the center is springy.  Let cool 5-10 minutes before digging in.

Nutrition tidbit:  Oats are high in fiber, contain anti-oxidants, are good for heart and cardiovascular health, and stabilizing blood sugar.  A diet rich in fiber, significantly reduces a woman’s risk of breast cancer…among other things.  Oats are also rich in manganese, selenium, phosphorus, magnesium, and zinc.
