Cucumber Tomato Salad

This here little salad was Plan B.  And as it turned out, it was much better than Plan A would have been.  Don’t you love it when that happens?  When something doesn’t go as planned, but turns out even better for it.  I find that happens a lot in life.  I have something planned but God has something bigger and better planned.  And even though I might be disappointed or I may freak out at first, I am always thankful in the end.  This salad is kind of like that.

Anyways, it is super simple.  There really isn’t even a real recipe, as you will soon see.

Cucumber Tomato Salad

Ingredients:

Sliced Tomato

Sliced Cucumber

Basil, coarsely chopped

Rice Vinegar

Olive Oil

Salt and Pepper

Directions:

Assemble tomato and cucumber in a small bowl or on a small plate.  Top with basil.  Drizzle with olive oil and rice vinegar. Salt and pepper to taste.
