Hearing things like this at dinner time really just kind of makes my day. I LOVE knowing that good healthful foods are going into my family’s bellies…and that they enjoy it too. Especially when ALL of them enjoy it. This salmon was fantastic and easy! Don’t we all love to hear that? That a meal is tasty and easy to make?
On a side note…I have noticed that meat does not make a pretty subject. Especially when you are hungry and just want to sit down and eat! Ha!
Balsamic Salmon
Ingredients:
1 1/2 lbs salmon filets
1/3 cup balsamic vinegar
1/3 olive oil + more for cooking
1 Tbsp dijon mustard
1 to 2 Tbsp agave, maple syrup, or honey
2 garlic cloves minced
salt and pepper to taste
Directions:
1. Whisk together all ingredients except salmon (obviously!) in a small bowl. Season salmon on both sides with salt and pepper.
2. Heat olive oil in large skillet over medium high heat. Cook salmon on both sides for 2 or so minutes, until starting to brown a little.
3. Pour balsamic vinaigrette over fish and simmer until sauce reduces and salmon is cooked through.
Do ahead: Mix up the marinade. Be sure to give it a good whisking before adding it to the pan.
