Honeydew Lime-Mint Cooler

When we moved in to our house, mint was taking over the ‘L’ shaped planter in the front.  We pulled most of it up and transplanted some into a couple of pots.  So I found myself searching for recipes with fresh mint.  I found this lovely simple salad (I think I left the cilantro out, but I am sure that would be yummy too) and made it for our house warming party.  I wasn’t completely sure Continue reading

Ah summertime!  Who doesn’t love warm weather and the smell of fresh food grilling on the grill?  I LOVE it.

I always check our weekly Sprout’s ad for their specials on fish.  We try to eat fish often (our girls typically like fish too) and try to buy wild-caught as much as possible.  Wild-caught is better for you and tastes significantly fresher.  The wild-caught varieties always seem to be more obscure types of fish compared to their farm-raised counterparts.  You just never know what is going to be on sale that week.  That’s all part of the fun!

This particular week it was swordfish, the steak of the sea.  Great for grilling!  I jazzed up this teriyaki marinade recipe and marinated the fish for about 6 hours.  Very tasty!  Jeff said, “This is restaurant quality!  …No, it’s better than restaurant quality!”

First, I have to confess.  Cooking with my little darlings is not exactly my favorite thing in the world.  I think I will enjoy it one day, but right now especially considering the amount of cooking that I do all whilst trying to keep the house in order and three little kids from raising havoc, I like to just get in there and get it done with as little mess (pssh!) as possible.

That’s my spunky Charlotte!

But I also know that involving your kids in the kitchen could Continue reading

The fence along the back of our backyard is lined with planter boxes.  There is a guava tree, a large palm, a few shrubs, and a ton of weeds.  At least there were a ton of weeds.  Jeff and I thought it would be great to plant some tomatoes (nothing beats home-grown tomatoes!), some herbs and some flowers.  We were hoping to at least get the beds weeded within the next few weeks.

Well this weekend we had our first dinner guests in our new home, our good friends the Sundins.  Daniel offered to share his gardening wisdom with us, but he came with more than gardening tips.  He came with a whole garden!!  And within about an hour and a half of arriving, Jeff and Daniel had planted our garden!  What a huge blessing and an huge help!  Seriously…what amazing friends!!  We totally did not expect to have a full-fledge garden planted after only one week in our house.  I am so excited and can’t wait for it to start growing!!
