Gluten-free, dairy-free recipes to keep your family happy and healthy

Chocolate Almond Flour Pancakes with Peanut Butter and Bananas

It’s been a busy and fun couple of weeks, and now I have more blog posts in my head than I have time for!

Chocolate Almond Flour Pancakes

We celebrated my birthday, I hosted a girls’ night, and then my parents came into town for a week.  Jeff and I went out for my birthday to this amazing restaurant in Cardiff called Ki’s.  Probably 75% of their menu is gluten-free (or can be made GF).  Not only that but they buy local, organic ingredients.  I had the macadamia coconut crusted mahi mahi.  Oh my goodness!  Our tummies Continue reading

Apple Cider Pancakes

Apple Cider Pancakes

I am so excited about this recipe BECAUSE these pancakes are sweetened with nothing more than apples.  No sugar.  No honey or agave or maple syrup.  Just apples!  Yet, they are sweet enough even to eat plain.  My girls Continue reading

Plan B Cucumber Tomato Salad

Cucumber Tomato Salad

This here little salad was Plan B.  And as it turned out, it was much better than Plan A would have been.  Don’t you love it when that happens?  When something doesn’t go as planned, but turns out even better for it.  I find that happens a lot in life.  I have something planned but God has something bigger and better planned.  And even though I might be disappointed or I may freak out at first, I am always thankful in the end.  This salad is kind of like that. Balsamic Salmon

“Where did you learn to cook so well?”

“Mmmm, I love this fish!”

“I can eat the skin.  I like the skin!”

Hearing things like this at dinner time really just kind of makes my day.  I LOVE knowing that good healthful foods are going into my family’s bellies…and that they enjoy it too.  Especially when ALL of them enjoy it.  This salmon was fantastic and easy!  Don’t we all love to hear that?  That a meal is tasty and easy to make?

On a side note…I have noticed that meat does not make a pretty subject.  Especially when you are hungry and just want to sit down and eat!  Ha!

Cake Batter Milkshake

Cake Batter Milkshake

Henry, who is coming up on 6 months, has totally been eyeing our food.  Not only that, but he frantically grabs for it with wild-bugged-eyes.  This boy wants to eat!  I decided to copy The Spunky Coconut in her choice for her daughter’s first food because I was completely intrigued by the creaminess of the Japanese sweet potato.  It required a trip to the Asian Grocer , but it was so worth it.  Henry loves it!

So you are probably wondering why I am blabbing on about Japanese sweet potatoes and Continue reading
