It’s been a busy and fun couple of weeks, and now I have more blog posts in my head than I have time for!
We celebrated my birthday, I hosted a girls’ night, and then my parents came into town for a week. Jeff and I went out for my birthday to this amazing restaurant in Cardiff called Ki’s. This here little salad was Plan B. And as it turned out, it was much better than Plan A would have been. Don’t you love it when that happens? When something doesn’t go as planned, but turns out even better for it. I find that happens a lot in life. I have something planned but God has something bigger and better planned. And even though I might be disappointed or I may freak out at first, I am always thankful in the end. This salad is kind of like that. Continue reading

Hearing things like this at dinner time really just kind of makes my day. I LOVE knowing that good healthful foods are going into my family’s bellies…and that they enjoy it too. Especially when ALL of them enjoy it. This salmon was fantastic and easy! Don’t we all love to hear that? That a meal is tasty and easy to make?
On a side note…I have noticed that meat does not make a pretty subject. Especially when you are hungry and just want to sit down and eat! Ha!

Henry, who is coming up on 6 months, has totally been eyeing our food. Not only that, but he frantically grabs for it with wild-bugged-eyes. This boy wants to eat!
