It’s been a busy and fun couple of weeks, and now I have more blog posts in my head than I have time for!

Chocolate Almond Flour Pancakes

We celebrated my birthday, I hosted a girls’ night, and then my parents came into town for a week.  Jeff and I went out for my birthday to this amazing restaurant in Cardiff called Ki’s.  Probably 75% of their menu is gluten-free (or can be made GF).  Not only that but they buy local, organic ingredients.  I had the macadamia coconut crusted mahi mahi.  Oh my goodness!  Our tummies Continue reading

Another thing I love about doing this here blog is it gives me an outlet for my photography hobby.  And a reason to practice.  I knew pretty early on in my photography hobby that I had little desire to Continue reading

I’ve had a real hankerin’ for carrot cake lately.  What with Easter and bunnies and CARROTS and all.  I recently saw this Carrot Cake Milkshake
recipe on one of my new favorite food blogs, Chocolate Covered Katie.  She is a vegan dessert maker so all of her recipes are dairy-free.  Yay!  This crafty little milkshake is an easy and healthy way to enjoy the yummy flavors of carrot cake!  And a perfect Easter morning treat!!

Peanut Butter Banana Cookies

Peanut Butter Banana Cookies

These cookies are the perfect little treat.  Moist.  Fluffy.  And who doesn’t love the classic peanut butter and banana combo?  There is just enough sweetness Continue reading

Originally I wanted to start this blog to have a place to keep all my favorite recipes in one spot and to share them as well.  Now it has become so much more to me.  It is challenging me to come up with my own recipes.  I do a decent job at creating dinner recipes all my own.  And I can usually alter a recipe successfully.  But to come up with an original cookie recipe???  Yikes!  But I did it!  Here is my first ever, I-made-it-all-up-myself cookie recipe.

These Pumpkin Oatmeal Cookies are one of my all time favorite cookies.  I have successfully made them gluten-free.  But they are FAR from healthy (still you should try them…with chocolate chips instead of raisins OF COURSE!). With the pumpkin oatmeal cookies as my inspiration and the 3/4 cup of pumpkin I had left from the chili and the scones, I made these Pumpkin Chocolate Chip Cookies.  Gluten-free, dairy-free, grain-free, refined-sugar-free (except for the chocolate chips and craisins).

I took them to play group and before they were eaten up, I remembered to take a picture of them.

I have been eating Gluten Free for over a year now and I am just now discovering recipes with almond and coconut flours.  I am guessing because of the whole Paleo Diet (which is grain-free) becoming popular.  But anyways, I LOVE these grain-free flours.  Not that I have anything against ALL grains.  I just love that I can make all kinds of normally-carb-packed goodies with these flours that are higher in fiber and protein than most other gluten-free flour substitutes and wheat flour alike.

Whole wheat : Dietary Fiber 3g, Protein 4g

Coconut : Dietary Fiber 11g, Protein 5g

Almond : Dietary Fiber 2g, Protein 7g

Brown Rice : Dietary Fiber 1g, Protein 2g

I found this recipe at JoyfulAbode.  When I saw these ingredients, I wasn’t so sure.  But the fact that her toddler gobbled them up and that the recipe is so simple, I figured it was worth a shot.  Plus, they are nutrient packed and free of sugar other than that which naturally occurs in the sweet potatoes.  So if these “cookies” are a hit, they are something I wouldn’t even mind packing for part of their lunches.

Here’s the Recipe… Continue reading
